I was expecting some fancy bean cooking hack, but this is basically how everyone in Maine cooks beans! It’s called baked beans and the traditional recipe is different but the method and result (perfectly cooked beans) are the same. You gave me a smile!

Marie – I had no idea, I swear! I grew up in the age of canned/frozen convenience foods so of course I didn’t actually like beans until somewhat recently.
