What’s going on here? This May marks 10 years of Not Martha. To celebrate I’m holding giveaways from some of my most favorite companies.

Today I’ve got a very exciting gift, a three-month subscription to Hellimae’s Salt Caramels. Each month you’ll get a different flavor, maybe even something special she’s thought up. I’ve had Hellimae’s and they are something to behold, huge chunks of soft, buttery caramel with sparkling jewels of salt on top. They are delicious. Ellen, the proprietress, has only recently started offering a caramel subscription so please allow me to point out how lovely a gift this would make for a loved one with a sweet tooth.

And if you’d like something to chat about answer this question: Have you ever made homemade caramel? I have, but the first time I attempted it I didn’t own a candy thermometer and they turned out burnt. And not good-burnt either.     Salt caramels are one of my vices! Or maybe they are a virtue? Anyhow, I would love to win this giveaway. I’ve tried to make homemade caramels before but never with any success. I can, however, make a mean caramel popcorn!

    Oh my goodness. Delicious.

    I have made caramel, with no thermometer. I’ve never had kitchen gadgets (no electric hand mixer until very recently!), and I find that it’s not too difficult to eyeball it if you’ve been doing it long enough. Dessert I can do – dinner, not so much.

    I’m too intimidated to try making any sort of candy. I’m sure I would just end up with a burnt, sticky mess. So, winning this would be great!

    oh man, I love love love sea salt + caramel (+chocolate!). I haven’t tried making any myself, but over the weekend I had the sea salt/caramel/chocolate scones at Alice’s Tea cup (NYC)… totally going to try some this weekend!

    Ive never tried making homeade caramel. Making truffles is as close to candymaking as I think Im gonna get.

    I have not made caramel. If i had a candy thermometer I probably would, but that would be dangerous (and not just due to burn risk)

    I’ve never made homemade caramel – I’ve thought about it though. I am kind of intimidated with the whole candy thermometer thing.

    Nope- I’m all too aware of how much burnt sugar hurts if it should make its way onto your skin. I try to keep the casualties to a minimum.

    I went through a phase in high school where all I did was cook: cakes, pie, an astonishing amount of lemon curd, caramel, and turkish delight, which is not what I imagined it would be from reading Narnia. Thankfully, the caramels always turned out right!

    Mmmmm. . . salt caramels! I feel about caramel the way most women feel about chocolate. So soooo good! I’ve never tried making my own – but I do make caramel sauce sometimes. It’s less fussy about temperature than the candies. It’s SUPPOSED to be for ice cream, but I just eat it out of the jar with a spoon. Sometimes I sprinkle a few nuts on top first. Bliss!

    I have never made salted caramels unless you count sprinkling kosher salt on a kraft caramel? I have obsessed about them and devoured the pictures of them on Etsy. I would love to try them!

    I haven’t made caramel myself but when I was a kid once my mom tried making them and I was there to taste. It was very exciting for me but apparently to difficult for my mom!

    I’ve made caramels as Christmas stocking stuffers, but it’s so messy and sticky on cleanup that I wouldn’t do it again other than for a special occasion. Or if someone bribed me :)

    Oh, I would love to taste these SO much. I tried making caramels many years ago. It was very labor intensive but the big mistake I made was letting the mass cool so much that cutting them was almost impossible. They were quite yummy!

    I once made homemade caramel sauce to bring along to a friends as part of a mobile sundae kit — it was awesome!! I’ve never tried to make the type I could cut up and chew though…

    I’ve never made homemade caramels. I’ve tried but it didn’t go well. I’m a successful amateur baker (the guys at work love specifically request my cookies and brownies) and I can cook reasonably well. But anything resembling candy just doesn’t work for me. Fortunately, most of the time, my mistakes turn into really good ice cream topping. :)

    My first attempt at caramels turn into more of a brittle than soft and chewy. Still tasty, you just had to suck on the pieces for a little while!
    I would love to pass this subscription on to my sister who just had a baby. I think it would make such a nice pick-me-up in her mailbox over the summer.

    I have made caramels only once, a chocolate salt variety that did not turn out well. I will try again someday, but candy making isn’t something I do often. That said, I love to eat them.

    oh yes I’ve tried making them a few times. The first time they burned (the time between perfect and burnt is so short!), the second time I cooled them in foil and I couldn’t get the foil off. The last time I made them they were very..um…oily I guess – my attempt at preventing them from sticking! I will say, every single time I am faced with salt caramels at a store, I HAVE to buy them! Yum!

    The closest I’ve come to making caramel is some type of caramel sauce. Making real candy ones just seems too complex. Just the thought of a candy thermometer scares me!

    these look delicious! i tried to make caramels for christmas gifts a couple of years ago and failed miserably. first batch, too hard. second batch, too soft. perhaps i need a new candy thermometer? making candy is like scientific or something. ;)

    I have made homemade caramel…caramel popcorn balls! I found the recipe when I was a teenager in 17 magazine and I still have the cut out recipe from the magazine in my recipe collection. Sooo yummy, although not at the same level as these caramels.

    The first time I made caramel, I got some hot candy on my finger. Not really thinking, I quickly stuck the finger under a cold tap, hardening the still hot candy to my finger and causing an ugly burn. I was a lot more careful the next time. I love caramel.

    For a few years my mom made caramels for christmas presents. A week or two before christmas our kitchen would turn into a factory, with cookie sheets and candy thermometers and huge pots and sugar everywhere. The caramels she made were amazing, and people would call her before christmas and ask if she was making them again so they would have something to look forward to. They would go all across the country, from our next-door neighbors in California to our family friends in Massachusetts and my dad’s college buddies in Texas. Somehow they stayed soft and perfect for long enough to make it that far. And they never lasted long, my brother and I would steal them whenever we had the opportunity. Definitely one of my favorite memories with my mom.

    Love your blog! There is no better combination that caramel and salt except to maybe add chocolate to it. There is a great chocolate store here (Kingsbury Chocolates in Alexandria, VA) that has fantastic sea salt, chocolate-covered caramels.

    I’ve never made any caramel (always meant to try!) but my Mom always makes it for Christmas and wraps hundreds of little caramels in tiny pieces of saran wrap.

    I did indeed make caramels. I started them at 10:00 on a weeknight. And lo, the stirring and stirring and stirring. I felt like I would never be finished. They were lovely, but the work…ugh. I have great respect for people who make them well, and often.

    I’ve never tried to make homemade caramel, but I did try to make homemade caramel icing before…and it was a huge disaster! I never quite understood the “soft ball” stage…

    Patience is the secret to homemade caramels. The trick is to plan a quiet time with some good listening material and a stool to sit by the stove. That and quality ingredients.
    I have made a mess of caramel sauce because that I try to rush. However I have found that salted butterscotch sauce tastes as good and is much easier.

    What a great giveaway! I don’t make candy at home, because the last thing I need is a convenient source of lots of calories. :-) If I win, I’ll probably give these to my mom, who can eat all kinds of sweets and not gain weight. I clearly didn’t win that gene pool. :-/

    One time I made a pecan pie. For some reason, I added like 100 cups of molasses. The final pie? Inedible to humans, but irresistable to squirrels. They ate through the garbage can to get at it.

    I have twice made homemade caramel sauce (from Elise’s recipe at Simply Recipes) and it had worked brilliantly both times! It’s a scary thing, to watch the sugar turn golden, but the result is spectacular.

    Mmmm. I make caramels every Christmas. For me, the trick is to have a friend in the kitchen while I make them. It makes the process less tedious and it’s nice to have a second set of eyes on the thermometer.

    I have made caramels before. I can’t remember where I got the advice that made me try it. It was something like: While it is boiling, you will think it is done, but it is not. You will be afraid something bad is going to happen, but it won’t – stick with it and wait until the thermometer says the correct temperature. I thought I read it here….

    These look incredible. Mmmm! I tried making salted caramels as Christmas gifts this year. They didn’t turn out so well. I think my candy thermometer was the culprit. I poured the hot caramel into a pan to solidify and later cut into chunks. But by the time it had cooled it was rock hard! I broke it into tiny bits and added them to cookies and as an ice cream topping. I think you’d classify my outcome as “toffee” not caramel. It was a bummer. I haven’t been brave enough to try it again, but I think I’ll have to soon.

    I actually made caramel for Baked’s Salted Caramel Chocolate Cake. The caramel turned out great, but I f-ed up the cooked frosting. It still tasted delicious though. Definitely one of the richest cakes I’ve ever eaten/baked.

    Yes, I have just made homemade caramels that I sent to my mother for Mother’s Day. I even coated half in Bakers Milk Chocolate, and they turned out fantastic! I have not bought any fancy salt to make salted caramels but I want to do that with my next batch.

    I recommend the book Who Wants Candy? by Jane Sharrock to anyone who wants to try their hand at candy making, everything I have made from that book has turned out great.

    But to get fancy caramels in the mail, that would be fantastic!

    I received a gift of some Hawaiian black salt and decided they would look pretty atop some homemade caramels. SO I had a friend over and we made caramels and the trick was to put the salt on at the right temperature because the salt turned out to be dyed and if put on to early made pretty black swirls… that did not look too appetizing…. but they were a tasty treat.

    I haven’t made actual caramels, but I have made Salted Butter Caramel ice cream (David Lebovitz’s recipe) – it was time consuming and messy, but AWESOME.

    I have made caramels before and highly recommend David Lebovitz’s salted butter caramel recipe – they’re amazing! But if you’re afraid to try the actual candies, start out with regular ol’ caramel sauce – no thermometer required. Just slowly cook the sugar (plus water) until it’s the color you want – meanwhile, the water will cook off. Then, turn off the heat, add the heavy cream, vanilla and if you like, a tiny bit of butter. heaven!

    I don’t make caramels but I do make English Toffee. The toffee part is very similar, just cooked a little longer.

    Yum, those look amazing! I made Sea Salt Caramels for Christmas gifts one year, and they weren’t too difficult. The most annoying part was cutting and wrapping them.

    YES! My mom always made caramels for the holidays. For the past two years, I have been inspired to make chocolate covered sea salt caramels. They are amazing! Patience and a good candy thermometer are the critical ingredients.

    I have made caramel!! Unfortunately at the very last minute I waited a bit too long and ended up with very, very hard caramel toffees. I was a bit discouraged but they were still so good I’m willing to try for chewy again – though if I could get some in the mail, it’d be even sweeter!

    I made salted caramel to go into a cupcake once. Dark chocolate cup cakes with dark chocolate icing filled with salted caramel. They were so incredibly sweet that I couldn’t eat them! But I did lick the pot that I made the caramel in :)

    I had the opposite problem! I tried once, and didn’t cook long enough. My caramel was a kind of gelatinous sweet paste. Still delicious, but not in the lovely toasted sugar way of good caramel.

    The first time I made caramel sauce, my sweet-seeking lizard brain saw the melted sugar turn the delicious golden brown and thought “mmm, caramel!”, so I promptly stuck a spoonful of the just-melted sugar into my mouth.
    Pro tip: if you’ve just melted sugar crystals down to a viscous liquid over a flame, IT’S GOING TO BE HOT AND IT’S GOING TO BURN YOU AND OH MY GOD THAT HURT.

    my earliest (and only) memory of making caramel was in Trinidad, when I was 10; my older (in her 20s!) cousin spoke of how wonderful it tasted when her Mama made it with her and how simple and awesome it was.
    Uhm mm m m . … a couple hours later the pot was burnt beyond recognition, we were chased out of the kitchen, and I never mentioned the word “caramel” for years after ;-)

    I once tried unsuccessfully to make a caramel sauce for a cranberry cake. The sauce, once poured over the cake, was more like hardened brown sugar “sauce” but fortunately the cake tasted good anyways!

    I made caramels way way back in the day… maybe 1993? at Christmas time. I used a recipe from a Williams-Sonoma cookbook called Gifts From The Kitchen. They were pretty easy to make and they tasted AWESOME.

    I make caramels (w/ sea salt!) every year for Christmas gifts. I’m always shocked at how different they turn out based on: humidity, outdoor temperature and my patience (you really do have to pay attention to that darn thermometer!) Some years I get gooey caramels that must be frozen to hold shape; other years they more closely resemble Werther’s. This year they were just right!

    I can’t remember if I ever have, but my husband has! He’s usually Mr. I don’t cook, and I always point out to him how odd that is. He’s a chemist with a particular interest in thermal science–to me, that sounds like a description of cooking!

    Well, last year it all came together for him. He was working at a plant using sugar for industrial processes, and the closest information he could find on it were these books on industrial scale candy-making. He decided to try his own hand at it at home for Christmas gifts.

    I tried to mostly stay out of his hair–it could be a little tense at times, with me having an intuitive sense of how things work in the kitchen, and him insisting that he knew what would happen on the graphs. He did learn a few lessons about real life, but on the whole, the results were delicious!

    I’ve made caramel-y topping, but never proper wrap ‘em up caramels. It’s one of those things my husband is always yammering at me about because “It’s going to make a huge mess!” when I want to make it, but then he’s wrong. (See also: marshmallows, anything I want to make ever.)
    It’s probably for the best that I avoid making them, though. Caramels are some of my favorite candy.

    I once tried making caramels and they came out melty-delicious. The problem way, they were so soft and stringy and sticky, it was impossible to cut them up and wrap them. Making them took 45 minutes, wrapping them took 3 1/2 hours and we ended up with a sticky, runny mess. Ah well, that’s why places make caramel you can buy.

    I tried to make caramel sauce once as a girl of 13, damn near ruined my mother’s sauce pan when I let the sugar go to long while talking on the phone to a friend after school. Gee whiz, I used to make a lot of after school kitchen messes. I think that’s the only way to really learn to cook:)

    yes, i tried to make caramels with my boyfriend once, and while the texture came out fine, they tasted too much like butterscotch to me, and not a lot like the caramels i was expecting.

    I have made caramel before. The first year I overcooked it and it was one solid block that we had to break apart with a ice pick and the next year way too soft and they had to be eaten right out of the fridge.

    oooh, caramels. i’ve never made caramels, but i’ve failed at both caramel sauce and caramel icing. my aunt millie makes the best caramel icing. when i would visit her in nevada, she would sent me home with a mason jar filled her with her caramel sauce. i would eat it one slow spoonful at a time to make it last.

    I have a great caramel recipe that you make in the microwave and once you figure out the correct amount of minutes to cook it in your microwave it turns out good every time. Also a candy thermometer is cheap, buy one.

    I actually have successfully made caramel before (thanks to the thermometer!) – but then made the mistake of giving in to the beautiful smell and tasting it too quickly. Fresh, searing hot caramel, fused to my hard palate…oww!

    Hasn’t dimmed my love for caramel though – I’d do it all over again. Just more slowly.

    (Though, other people making it – better yet!)

    My mother-in-law has a tradition to make chocolates and caramels every Christmas and my husband and I have embraced that tradition too. My first batch of caramel was disastrous–we used a meat thermometer. Not recommended!

    After two generations of women who were career focused (one of the first female doctors in our State and a chemistry PhD), I had almost no chance of having a home cooked meal unless I pulled something together. Before I was allowed to use the stove, that made for a lot of microwaveable meals.

    But my mom, who had also done some work in crystallography, saw that I had an interest in learning to cook, and so she put her knowledge of crystal formation to use in teaching me to make hard candies one Christmas. Our first efforts turned out miserably, but we finally got the hang of things. Christmas morning, I received a candy thermometer and I hopped right back into the kitchen to try to make caramels. Well it didn’t go so well, and I sort of lost interest, as my cooking began to more heavily lean toward the savory. But I still have that candy thermometer that has moved with me across 3 continents, and at some point I really want to give making caramel another try!

    I once attempted to make caramel for caramel apples. It was an absolute failure– totally burnt (and I had a candy thermometer!) and it was so hard to clean the pot! I’ll stick with making caramel popcorn! I’d love this gift…nothing’s better than chewy soft caramel!

    I haven’t made candy in quite a few years and I think the last time I made anything sticky it was taffy not caramel. I might have to try as I am very fond of salty sweet candies. While on a trip I had the best Salt Caramel Ice Cream during an airport layover. Mmmmm

    ah memories! my husband and I got adventurous and tried to make salt caramels with pink himilayan salt. I guess we overcooked or something because they came out just shy of hard as a rock and more than likely would pull out a tooth, sort of the caramel version of now and laters? i think we threw almost all of them away and havent tried since. we will leave our caramels to the professionals!

    There’s a local confection, called a modjeska. I’m not sure where it originated, but the local candy makers make it and I can’t seem to find them outside this area. It’s half of a jumbo marshmallow wrapped in caramel. It’s scrumptious.

    I once tried to make them, it was not a good experience. Have you ever read the story of B’rer Rabbit and the Tar Baby? That was me and the caramel. I’d get stuck in it and then get more stuck trying to get unstuck. I think I wound up tossing pan and all in the garbage.

    It was fun to lick off my hands though.

    Oh my word, I’d LOVE THIS! I have made both caramel sauce & caramels at home. My caramels turned out softer than I wanted. I was hoping to give them as Christmas gifts, but I didn’t think they were quite up to snuff. They did taste fantastic though, with a little seasalt on top.

    Yes! I’ve made caramel turtles. My favorite candy is my grandma’s almond roca (a christmas tradition), which is more of a toffee. One year I made enough to give as favors at a friend’s wedding — it was my gift to them as I couldn’t afford a proper gift.

    Yes, I have made homemade caramels! And unlike every other kind of candy I’ve made at home, it was an enormous pain in the neck to get right and expensive to get it wrong, which just made me appreciate the local candy-maker that much more.

    From now on, it’s toffee at home, caramel from the nice shop. Thank you, caramel-makers, for making caramel so I don’t have to.

    I am a carmel fan and salted ones are the best! I make home made almond roca, but have not tried soft carmels before. Candy thermometers are good, but using the old fashioned soft ball to hard ball test is much more fun.

    I haven’t attempted to make chewy caramels but i did try to make caramel for dipping apples. TERRIBLE. i was trying to make it vegan so I used magarine and soy milk instead. The caramel just slipped right off the apples. It never set up. We ended up turning it into an apple dip.

    I’ve had amazing luck, twice now, with Martha Stewart’s gingerbread caramel recipe. They are amazing, and it makes a million and it’s tons of fun to wrap ‘em up and give them out at Christmas!

    Yep, I’ve made it, and I love it – though cutting up my first batch (which I let get too hot) was a dangerous and frustrating affair. Subsequent batches were chewier and less impossible to work with.

    I’ve never made caramels at home, but I’d be up for trying! The closest I’ve come is a french Canadian white fudge called “sucre à la crème”. It’s pretty freaking tasty, too.

    I haven’t made caramels, but I’ve definitely made caramel to use for different things. For peanut brittle and caramel corn. A layer on a cake. I do believe I winged it, and only had it massively burn twice.

    I made them every Christmas for my grandmother who loved them! I still make them even though she’s gone, but not as many.

    The key is to get a good, digital thermometer with a metal probe!!!

    I haven’t made caramel, but I do have an AWESOME recipe for Crispy Rice squares made with a blond-fudge-like binding agent, instead of marshmallows. Seriously decadent!

    I have always been afraid on hot sugar until I made Duck a la Orange for Easter. The recipe starts out almost like a caramel and now that I know I have nothing to fear I will give Ina’s recipe a go.

    I made some creme fraiche salted caramels this past Christmas and they came out pretty good! They were a little soft, but it was the first time I had ever made candy, so I was proud of myself even though they weren’t perfect.

    I’ve made homemade caramel – it was easier than I thought! Well, the caramel making part was. The cutting and wrapping was the sticky tricky part and took what seemed like forever. I rarely ever have more than a few free hours in a week to do things like make candies, so I’d love to have them appear in my mailbox instead!

    I made salted caramels for the holidays and they were delicious!! Going to make it an annual tradition. They are great for mailing with holiday gifts since they have a longer shelf life than most other sweets and they aren’t breakable like a cookie.

    I have made caramel sauce at home, which turned out lovely.
    I haven’t tried to make caramels, but I have tried to make molasses candy, and other chewy candies…they have never worked out, and always turn out to be filling removers…they taste great, but are way too hard…

    I recently attempted to make caramels. It was really light, so I kept cooking it, despite the candy thermometer temp. Needless to say, I learned to pay attention to the candy thermometer, not the color or you will end up with something the texture of a Sugar Daddy. Tough.

    I love caramel more than chocolate!
    There is nothing that tastes better to me than slowly toasted sugar, as evidenced by my hips.
    I have been using my grandmother’s caramel recipe for years and years. I try to play with it some-adding this or that- but nothing is as good as when I just make it her way. I learned to cook candy without a thermometer, but have since gotten lazy and use one now.
    I have started sprinkling a wee bit of sea salt on the top of some and that tastes amazing.

    I have never made caramel before – I can barely boil water. On a slightly different yet related note: Dulce de Leche – did you know that you can make it by boiling a can of sweetened condensed milk? It’s not for the faint of heart as it could, potentially but not likey, explode and then you’d have to scrape the deliciousness off the ceiling.

    i love making caramel, it’s like a terribly dangerous experiment with a delicious outcome. i especially love how it kind of volcanoes when you add the cream what with the crazy bubbling and all. but don’t be scared, it’s not difficult and if you pay attention (and can resist sticking your finger in the pot) not dangerous either.

    I made toffee once which was a lot of work and required a careful eye and candy thermometer but turned out beautifully. I would love to make caramel but my little ones don’t allow me to give my undivided attention to cooking these days.

    I love salted caramels! I have a recipe for caramel topped ice cream pie. The first time I made it I didn’t put enough milk in the caramel batch and it hardened to brittle on the ice cream. Oops.

    I have never attempted caramel. I don’t know what it is, but whenever I attempt to use any kind of melted sugar recipe, it turns from “Almost done” to “DEAR LORD JESUS, YOU’VE BURNED IT” in a shockingly short amount of time. It terrifies me….

    I make caramel at least 2 times a year. The hardest part is just standing there and stirring! Its a huge hit for gifts, and I love to sprinkle Maldon salt on top!

    I tried making caramels. Once. My candy thermometer wasn’t as accurate as I thought it was so, while it didn’t burn, they weren’t a soft candy when they were done. They were HARD. Tasty, but one had been have a good dental plan if they were to be eaten.

    I’ve made caramels a number of times. I have a recipe for caramel brownies, and I always found that making the caramels was better than having to unwrap a bunch of caramels from a bag. I love them, but have stopped doing it now that I have two kids and a full time job.

    Caramels are my favourite thing ever. Evah. But the only thing I’ve made that involved a candy thermometer was fudge with my Dad when I was a kid. The fudge never actually set any of the times we made it so we ate it off spoons all sweet and kinda caramelly-like.

    I’ve tried to make caramel things before, usually sauces to dip things in… they usually turn out as hard as a rock. =( Even the hard stuff is good if you transform it into caramel hot cocoa though, plus it makes pan cleanup easier!

    I absolutely love caramels. I have made them; for Christmas a few years ago I made them as a part of a gift for my in-laws. They turned out OK, but all of the stirring and watching closely to make sure they don’t burn was too high maintenance for me.

    I have never tried making caramels before. There are just a few things that I’m certain I would have no problem making if I would only get over my initial fright and jump right in. One would be making any kind of candy requiring a thermometer and the other would be yeasted breads. Which is kind of funny because bread and candy are two of my very favorite things.

    Ooooh, these look scrumptious. The closest I’ve come to making caramels is unwrapping a bagful of Kraft caramels for caramel apples, and I failed at that because I am easily distracted & I forgot about them on the stove & I burned the caramel & what I wasn’t able to get out of the pot, was petrified to the bottom =-(

    Yes, I have made caramels, and with success. My mother taught me early the value of a candy thermometer…I’ve always had one in my kitchen. Although since my signature sweet is now the dark chocolate caramel truffles with sea salt that I have been perfecting over the last couple of years, I feel pretty comfortable just eyeballing it.

    I have made caramels in the microwave and in a pot on the stove. I don’t remember if the microwave recipe required a thermometer or not (I’ll have to look). The caramels were delectable both ways. The fresh vibrant flavors of candy without preservatives is unbeatable and caramels are my favorite.

    I tried to make salted caramels for xmas gifts two years ago. They would never set up. Just stayed a little too gooey. So, I turned them into salted caramel ice-cream. Which was delicious!     Yum! I made caramel just the other weekend to drizzle on some popcorn. It was delicious but I decided to skip using my candy thermometer and didn’t take it to the hard-crack stage, so it was sticky and chewy and pulled one of my crowns out of my mouth. Oops! Was it worth the cost of a trip to the dentist…hard to say. These salted caramels look like they would be!

    I have made fleur de sel caramels but it’s always iffy as my candy thermometer is not that reliable so they come out all different consistencies….

    The most daring candy I have ever attempted is fudge but I do own a candy thermometer, so really I have no excuse. I have been reading about the joy of salted caramels for a couple of years now (it seems) & would love to try them out. However, my husband loves caramels, so I suppose I could share (it is a 3 month subscription after all!).

    I’ve never made caramels successfully, though I saw a recipe linked on Pinterest today for honey lavender caramels that has me itching to try again. I always battle to find heavy cream here – so frustrating!

    I’ve tried to make them a couple of times, but the set was never right. I wanted this kind of caramel – ooey gooey, but hold it’s form until you bite in. What I got was more hard-set; it softened in your mouth but if you bit down suddenly – ouch!

    I made my own salted caramels this past holiday season to mail out. I followed a recipe from Ina Garten and after I poured the caramels and through in the fridge I realized they were too underdone. I thought I would have to scrap the whole batch, but I looked it up on the internet and found a source that said to just return to sauce pan and cook longer. I did and they turned out awesome!

    I honestly dont undertsnad how Fran’s can charge so much for their salted caramels considering how cheap and easy they are to make. I guess an Obama endorsement can go a long way.

    Salt caramels are my very favoritest of all the candies ever. Whenever I eat Five Caramel Ice Cream I always sprinkle salt on top. Yum.

    love salt caramels. Make them, cut them in thin sticks (think thick julienne) and then make a tic tac toe on top of cupcakes. Let kids play with small jellybeans and the winner gets the cupcake!

    Mmmm…caramel. My grandmother makes caramels every Christmas and she has a certain method of doing it and she never lets anyone help because she is sure they will screw it up. So while I’ve never actually made them, I have wrapped, unwrapped and eaten close to my bodyweight in caramels.

    Those sound lovely! Absolutely lovely. I made my first caramel sauce a few weeks ago. It was good, but since I didn’t have cream on hand I subbed sour cream per some internet recommendation and I wasn’t nuts about that taste. But I think I could successfully make a delicious caramel sauce if I tried again with all the ingredients ready.

    I’ve made dulce de leche before by boiling a can of sweetened condensed milk for hours. I have yet to own a candy thermometer though and attempts without it are just smelly scorched sugar at the bottom of a pan. :-/

    I love caramel. Not long ago I got caught up in the bacon in everything craze and tried to make bacon caramels with smoked salt on top. Turned out more like brittle and definitely wouldn’t go in the successful category. Lately I’ve been adding a nice blob of Trader Joe’s fleur de sel caramel sauce to my morning latte. Mmmm!

    I made the SprinkleBakes Salted Ale Caramels with Pretzels and they were deeeelicious. Not ale-y enough for me, personally. I dipped some in chocolate, swirled with some white chocolate on top, sprinkled some salt. Got all fancy and stuff. Tried pecans in come, but pretzels are definitely my new favorite filling.

    I am addicted to salted caramels. This would be awesome.
    I have made a caramel pie before, but not caramels. Caramel pie is easy, you just put a can of sweetened condensed milk in a pan of barely boiling water (unopened) and leave it there for an hour, then put in a graham cracker crust, top with whipped topping and sprinkle with chocolate chips. Super Easy!

    I didn’t know that I needed to check the accuracy of my candy thermometer by putting it in boiling water and checking for 212 degrees. My is 12 degrees too high and that is a big difference in candy land. I love caramels! Lesson learned.

    I’m amazed so many people have attempted to make carmels! I’m lucky I get dinner on the table half the time! Recently picked up some salted carmels at Whole Foods and now me and a bunch of co-workers are addicted (I know who’ll I’ll be sharing these with if I win!)!

    Ive made caramel twice. Once, I didnt have a thermometer and thought for some reason I was cool enough to get by without one. dumb move. The other, I somehow just barely missed the mark and overcooked it.

    If I win only one internet giveaway in my lifetime, let it be this one. I made perfect, ooey-gooey but not-too-runny caramels for Christmas one year, using a combination of recipes found online. Amazing. But I failed to take good notes about my newfangled recipe so that when I tried the next year, I failed. Too bummed to try again!

    I have successfully made caramel at home, in the microwave no less! It took me a couple of tries to get it just right, but now it’s foolproof.

    If it requires a candy thermometer, it’s too high maintenance for me though I felt quite empowered when I made the caramel for these insanely delicious bars http://cookiesandcups.blogspot.com/2010/03/experiments-and-kit-kats.html apparently crushed up graham crackers are very forgiving and agree with me that a thermometer is just a pain.

    I love making candy! – fudge, salt water taffy, caramels, sponge toffee – but I rarely manage to make it right… :( I’ve sadly lost many a batch to over cooking or crystalization and I actually have burn blisters on my hands right now from pulling taffy (that turned into inedible rocks anyways). *sigh* a caramel subscription sounds pretty wonderful….

    I’ve attempted caramel once…it was tasty but turned out way too hard.
