    the buttermilk pancake recipe seems weak. it is not helpful to tell us to get real buttermilk. that can be awfully hard to do, as the writer even admits. cooks illustrated had a buttermilk pancake recipe that deals with the problem of grocery store buttermilk by adding a little sour cream. they also use both baking powder and baking soda and let the batter rest for 10 minutes before frying. they were the fluffiest most delicious pancakes ever. i highly recommend.

    Christina – Any chance you could point us towards the recipe or reprint it here? Or at least give specific amounts for the sour cream/baking powder/baking soda mixture and how they use it?

    I love the fluffy oatmeal pancake recipe on Epicurious ( It uses buttermilk too, and taste unbelievably light and fluffy.
