Late, but perhaps of note if more pot pies are in your future--America's Test Kitchen's (the Cook's Illustrated gang) website has a free video/recipe up right now for a 30 minute chicken pot pie with biscuit topping.

Pot pie was just what I was craving. Thanks for all of the recipes.
Last night I had leftover chicken, the aforementioned craving, but NO TIME. So I got past my hang up about using frozen vegetable mix and tried the curried pot pie. It was suprisingly good. The curry added a nice note without being too strong. And it was dead easy and fast.
You can add my recommendation to try it the other two you already have.

I'm going to try the kale recipe tomorrow - I have a huge bag of kale (for making green smoothies every morning) chilling on our balcony.
Thanks for the tip!

Isn't that exactly DIGITAL? (Tee-hee. Or Tea-hee?)

Thanks for the pot pie links. I made chix pot pie for V-day as well. I just kinda do my own thing for the recipe. Add the veggies I like. It's very tasty - most definitely a low rent dish. Perhaps some of your links can help my pie move on up. . .ha!

I know that I can always swap the meat out to make a vegetarian pot pie, but I always wish I could find a good pot pie recipe that was designed to be vegetarian from the get go. I will have to try the Alton Brown curry one with garbanzo beans. Yum!

That brussels' sprout salad is similar to one I make from Gourmet. It is absolutely amazing.

A food processor is extremely useful to shred them, though. A mandoline didn't take that long, but it makes me nervous to use one after a bad incident once.
