Z - Two of my twelve jars show stress fractures after two rounds of baking. No explosions though. Usually there is some time between when I took the jars out of the oven and got all the things I needed (baking sheet, silpat, oven mitt, got the frozen jars open, made sure oven was preheated, take a photograph). So, do allow some time for the jar warm up a bit.

that looks so yummy! i love that you can keep it in the freezer for later.

i ate at ubuntu (in napa) recently and had the most fantastic dessert - it was a deconstructed blackberry cheesecake in a jar. it wasn't baked like a traditional cheesecake, but rather had similar components, layered - graham crumble, a really light creamy cheese-y layer and fresh blackberries. it was one of the best desserts i've ever had.

What a super idea to make up the pies and keep them in the freezer. I was trying to think up some interesting things to do while peaches are in season and think this qualifies.
