Mmmmmmmmm, Digs Magazine has up a story on cooking with ginger. I grew up in the midwest and didn’t get to know the joys of ginger until just this past year when I discovered I was surrounded by Thai restaurants here in California. I (seriously) thought ginger was just a powdered spice for gingerbread. Check out the recipes Digs Magazine supplies us with: super easy ginger tea, ginger martini (!), and some wonderful gingerbread with candied ginger icing.
